Pumpkin pie overnight oats
I have been enjoying starting my days off with overnight oats. They are filling, satisfying, full of fiber and protein. Here’s one of my favorite recipes. These are so interchangeable, if you don’t have pumpkin you can substitute fruit of any kind fresh or frozen.
1/2 C. Old fashioned rolled oats (uncooked)
1/2 C. Almond milk (any milk of your choosing)
1/4 C. Pumpkin purée
1/4 C. Cottage cheese or Greek yogurt
1 tsp. Cinnamon 1 tsp. Pumpkin pie spice
1 Tb. Sugar free vanilla pudding mix dry (I use to sweeten but any sweetener would work)
1 Tb. Vanilla
Stir all ingredients together, cover and put in fridge. Let sit at least 6 hours before eating.
